Each year we travel to Seville to select the best oranges. The first stage in making the Tiptree ‘Tawny’ Orange Marmalade is to gently simmer the whole oranges, this makes the peel really tender. \u003c\/p\u003e\u003cp class=\"\"\u003eThe oranges are then inspected and prepared by hand. The orange pulp is scooped out, the pips are sieved and the thick peel is cut. The oranges are then cooked with sugar in small batches using traditional, copper-bottomed pans. After cooking for a second time, the marmalade is left in a pail to cool overnight.
