Rose Tartar Sauce - for Fish Platter
This sauce complements prawns, smoked and fresh baked salmon. Long thin strips of cucumber, marinated in seasoned virgin olive oil, can be served on the fish platter.

- Chop gherkins, capers and parsley.
- Put the mayonnaise into a dish, stir in Tomato Ketchup and fold in other ingredients.
- Chill then serve with fish platter and cucumber strips.
