Shredded mozzarella is a good alternative to prawns - great as a starter or light lunch with crusty bread.

Ingredients and Method


  • 2 large ripe avocados
  • 20 seedless white grapes
  • 4 sun-dried Tomatoes in oil
  • 3 tbsp olive oil
  • 3 tsp Tiptree Tomato Ketchup
  • 2 tsp freshly squeezed lemon juice
  • To finish:
  • Prawns or mozzarella
  • Rocket
  • Cherry tomatoes


  1. Split grapes lengthwise and add chopped sun-dried tomatoes.
  2. Mix olive oil, Tomato Ketchup and lemon juice and pour over grapes.
  3. Split avocado lengthwise, remove stone and fill with grape mixture.
  4. Top with prawns or mozzarella, dust with black pepper serve with rocket and tomatoes.
