Chicken Breast with Tiptree Marmalade

Ingredients and Method


  • 4 chicken fillets, slightly flattened
  • 3 tbsp rapeseed oil
  • 4 tbsp Tiptree Orange Marmalade
  • 1 tbsp ginger, peeled and finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • 3 tsp Tiptree Chilli Mustard
  • 50 mls freshly squeezed orange juice
  • Sea salt and black pepper
  • Bunch of chives, finely chopped


  1. Heat a heavy-based frying pan.
  2. Heat 2 tbsp rapeseed oil; season the chicken on all sides with sea salt and black pepper.
  3. Placed in the heated oil and cook on a medium heat for 3-4 minutes on each side, or until cooked through.
  4. Meanwhile combine the marmalade, ginger, garlic, mustard, orange juice and the remaining rapeseed oil.
  5. Then add the mixture to the chicken breasts and simmer gently for 2-3 minutes, taking care not to let the sauce burn.
  6. Serve with creamy mash and a green salad. Top the chicken breast with the fresh chives.
