This delicious cake sweetened only with Tiptree English Borage Honey should cheer the heart and lift depressed spirits. Borage was given to Roman soldiers for courage and comfort. Borage, the Gaelic word for courage, inspires this cake.

Ingredients and Method
Ingredients
- 40g butter
- 60ml/4tbsp Tiptree English Borage Honey
- 150ml milk
- 200g wholewheat flour
- 10ml/2tsps baking powder
- 1 medium egg beaten
Method
- Preheat oven to GM 6/200C
- Gently heat the butter and honey together until melted. Remove from the heat and add the milk
- Combine the wholewheat flour and baking powder in a bowl. Mix in the melted butter, honey and milk and the beaten egg
- Spoon the mixture into an oiled 17.5cm (7ins) cake tin and bake for 25-30 mins until well risen and golden brown
- Serve warm, drizzled with warmed Tiptree English Borage Honey
