Rose Tartar Sauce - for Fish Platter

This sauce complements prawns, smoked and fresh baked salmon. Long thin strips of cucumber, marinated in seasoned virgin olive oil, can be served on the fish platter.

Ingredients and Method

Ingredients

  • 3 Small Gerkins
  • 1 tsp Capers
  • 3 Sprigs of Fresh Parsley
  • 3 tbsp Tiptree Mayonnaise
  • 1/2 tsp Tomato Ketchup

Method

  1. Chop gherkins, capers and parsley.
  2. Put the mayonnaise into a dish, stir in Tomato Ketchup and fold in other ingredients.
  3. Chill then serve with fish platter and cucumber strips.
