Ingredients and Method


  • 175g Butter
  • 8 tbsp Golden Syrup
  • 2 Large Eggs
  • 200g Tiptree Orange Marmalade
  • 350g Self Raising Flour
  • 1 tsp Baking Powder
  • 1 tsp Ground Cinnamon
  • 1 tsp Grated Nutmeg
  • 1/2 tsp Ground Cloves
  • 50g Sultanas
  • 150ml Full Cream Milk
  • 50g Corn Flakes
  • Marzipan Decorations


  1. Set oven at 180c or 160c fan.
  2. Grease and double line a 20cm square cake tin with greaseproof paper.
  3. Sift flour, baking powder and spices and set aside.
  4. Beat the butter then beat in add half the syrup.
  5. Whisk eggs and stir them into the mixture (we added some flour with the eggs)
  6. Stir in half the marmalade.
  7. Add flour, baking powder and spices then add sufficient milk to make a stiff mix.
  8. Stir in sultanas.
  9. Pour mixture into cake tin.
  10. Crush corn flakes. Mix remaining marmalade and syrup and stir in corn flakes.
  11. Spread evenly on top of cake but keep away from edges.
  12. Cook for 55-60 minutes. Test after 50 minutes.
  13. Remove from oven cool on cake rack, removing greaseproof paper after 5 minutes.
  14. Serve or decorate with Chocolate Marzipan balls for an Easter or teatime treat.
