Watercress & Goat's Cheese Salad

A quick winter salad for lunch or as a starter. Double the amount of goats cheese for lunch to 400g.

Ingredients and Method



  1. Trim watercress and roughly chop.
  2. Peel carrots and cut shavings of carrot using a potato peeler.
  3. Deseed pepper and thinly slice.
  4. Add carrot and pepper to watercress and place on serving dish.
  5. Cut cheese into 1/4 inch thick rounds.
  6. Place cheese on ovenproof dish and put under hot grill until golden brown.
  7. Mix oil, mustard and tomato sauce and add to tossed watercress.
  8. Top watercress with warm goats cheese or shredded ham (or both).
  9. Serve immediately whilst cheese is still hot.
