Herby Potato Salad
We have prepared a mouth-watering recipe using our very own Tiptree Herb Mayonnaise. Try our delicious Herby Potato Salad, a perfect side dish that complements any barbecue feast.
680g New Potatoes
120g Tiptree Herb Mayonnaise
Salt and Pepper, to taste
Optional: 60g finely chopped red onion or spring onions
Wash and scrub the potatoes thoroughly. Leave the skin on for added texture and nutrients. Cut the potatoes into bite-sized cubes.
Bring a large pot of salted water to a boil. Add the potato cubes and cook until tender but still firm, around 10-15 minutes. Test with a fork to ensure they are cooked. Be careful not to overcook as you don't want them to become mushy.
Once the potatoes are cooked, drain them and let them cool slightly. Transfer the potatoes to a mixing bowl.
Add 120g of Tiptree Herb Mayonnaise to the potatoes. Gently toss to coat each potato cube with the creamy herb mayonnaise dressing. Add salt and black pepper to taste. Mix well to ensure all the potatoes are evenly coated.
Optional, add 60g of finely chopped red onion or spring onions for an extra burst of flavour and crunch. Mix gently to incorporate the onions.
cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the Flavors to meld together. For even better results, refrigerate overnight.
Before serving, give the potato salad a quick stir. Taste and adjust the seasoning if needed.
