Air Fryer Cheese and Red Onion Rarebit Toasties

This air fryer rarebit recipe is a simpler version of the classic Welsh delicacy. Under the cheesy golden topping is a layer of sweet tangy Tiptree red onion chutney for a delicious burst of flavour. Quick and easy, this dish makes for the perfect lunch.

Ingredients
For the rarebit toasties
- 4 large slices of good quality bread (sourdough works well)
- 300g mature Cheddar cheese
- 1 tbsp plain flour
- 2 egg yolks
- 1 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- 2 tbsp cream cheese
- Pinch of black pepper

1 jar Tiptree Red Onion Chutney
For the Quick Pickled Red Onion
- 1 red onion, halved and very thinly sliced
- 2 tbsp red wine vinegar
- 1 tsp caster sugar
- Salt and pepper for seasoning
For the Salad
- 1 bag of lamb’s lettuce
- 1 tbsp pickling liquid from quick pickled red onions
- 3 tbsp olive oil
- ½ teaspoon Dijon mustard
- Salt and Pepper
Directions
Make the quick pickled red onions
- Place the vinegar and sugar in a bowl and stir until the sugar dissolves.
- Add the onion and toss to coat.
- Set aside for 10 minutes.
Make the rarebit toasties
Toast the bread in the air fryer on one side for 5 minutes at 200°C until golden brown. (Unless you have a large airfryer, we suggest doing this in two batches.)
- Finely grate the cheese and mix with 1 tbsp of plain flour.
- Mix the egg yolks in a medium bowl until smooth.
Add the grated cheese, cream cheese, Worcestershire sauce, mustard, and black pepper. Mix well.
- Take the bread out of the air fryer and turn it over.
- Spread thickly with a layer of Tiptree Red Onion Chutney.
- Spoon the rarebit mixture over each slice of bread in an even layer.
- Return to the air fryer drawer and bake for 8 minutes at 170 °C until bubbling and golden brown.
Make the salad
- Put lamb’s lettuce in a large bowl.
- Drain the pickled red onions and mix 1 tbsp of this pickling liquid with 3 tbsp of olive oil and ½ tsp Dijon mustard. Add salt and pepper to taste and whisk to combine to make a dressing.
- Just before serving dress the salad.
- Serve the rarebit toasties hot, with the salad, quick
pickled red onions, and more Tiptree Red Onion Chutney on the side.
