Bond Street's Bread Pudding with Tiptree Mincemeat
A delicious pudding that can served with Ice Cream or Custard. It can also be enjoyed on it's own with a warm Tiptree Mulled Wine or a Cup of Tea. Created by the team at the Tiptree Tea Room at Bond Street.
500g Tiptree Mincemeat
2 Medium Eggs
Demerara Sugar to top
Preheat oven to 160’F.
Tear up 500g of bread into small pieces into a bowl, then add 500g of Mincemeat and 600ml of milk. Scrunch together the mixture until combined.
Into the same bowl add 2 beaten eggs and 140g of sugar and combine.
Let the mixture rest for 15 minutes.
Once rested transfer your mixture into lined 8”x8” tin.
Cook uncovered for 1 hour. Then remove from the oven and sprinkle the demerara sugar on top. Cover the tin in foil and cook for a further 30 minutes.
Serve with Ice Cream, Custard or on it’s own with a cup of tea.
