Christmas Pudding Eton Mess

This Eton mess is the classic English pudding with a Tiptree twist; billowy whipped cream flavoured with our Christmas pudding rum liqueur, mixed with crushed meringues, swirls of Tiptree Christmas Conserve and pieces of our delicious Christmas pudding.
Needs 6 small dessert glasses.
Ingredients
- 300ml whipping cream
- 4 tbsp Tiptree Christmas Pudding Rum Liqueur
- 6 meringue nests
- 120g Tiptree leftover cooked Christmas Pudding

60g Tiptree Christmas Conserve
- 20g pistachio nuts, finely chopped, to garnish
- Zest of 1-2 clementines, to garnish
Directions
- Whisk the cream with the Tiptree Christmas Pudding Rum Liqueur until voluminous and in soft peaks, using a hand or stand mixer.
- Break up the meringue nests with your hands into small pieces. Fold this lightly into the cream.
- Crumble the Tiptree Christmas Pudding into small pieces and fold this into the cream mixture.
- Loosen the Tiptree Christmas Conserve by mixing it with a spoon, then fold this gently into the mixture, for a rippled effect.
- Divide between 6 dessert glasses and sprinkle with the chopped pistachios and garnish with the clementine peel.
Additional Information
If you don’t want to use pistachio nuts just garnish the top with orange zest
