Tiptree Hot Mango Chicken Tray Bake

Ingredients
- 4 chicken thighs (skin-on, bone-in)
- 1 red pepper, sliced
- 1 small red onion, sliced
- 1 courgette, chopped

3 tbsp Tiptree Hot Mango Sauce
- 1 tbsp light soy sauce
- 1 tbsp lime juice
- 1 garlic clove, crushed
- 1 tsp grated fresh ginger
- 1 tbsp olive oil
Directions
Preheat oven to 210°C/190°C fan /Gas Mark 6.
In a bowl, whisk together Tiptree Hot Mango Sauce, soy sauce, lime juice, garlic, ginger, and oil.
- Place the chicken and vegetables in a large baking dish. Pour over the sauce and toss to coat. Use a pastry brush to ensure the chicken is well coated.
- Roast for 40 minutes, turning halfway through, until the chicken is golden and cooked through.
- Serve with fluffy rice or couscous and fresh
coriander.
