A quick winter salad for lunch or as a starter.
2 bunches fresh Watercress
2 Fresh Carrots
1 Red Pepper
2 packs of 100g portions of Mild Goats Cheese
6 slices of Cooked Ham shredded -
3 tablespoons Olive Oil
1 tablespoonful Tiptree Wholegrain Mustard
1 teaspoon of Acacia Honey
1 tablespoonful Tiptree Tomato Sauce
Trim watercress and roughly chop.
Peel carrots and cut shavings of carrot - using a potato peeler.
Deseed pepper and thinly slice.
Add carrot and pepper to watercress and place on serving dish.
Cut cheese into 1/4inch thick rounds.
Place cheese on ovenproof dish and put under hot grill until golden brown.
Mix oil and Mustard and Tomato sauces and add to tossed watercress.
Top watercress with warm goats cheese or shredded ham (or both)
