Poppadom Bites

These crunchy bites are the perfect dish to share at a party or to serve with drinks. Mini poppadoms are loaded with Tiptree’s silky spiced mango chutney, minty cooling raita, lime pickle and Indian-style tomato and onion salad for a delicious appetiser that is both quick and easy.
Ingredients

12 mini poppadoms

4 tsp Tiptree Mango Chutney

4 tsp Lime Pickle
For the Cucumber Raita

250g Greek Yoghurt
-
1 small clove of garlic, finely minced

Half a small 25g packet of coriander, finely chopped
-
10 mint leaves, finely chopped

Juice of ½ a lime
-
½ tsp garam masala
-
¼ cucumber grated and squeezed out to remove most of the liquid

Salt and pepper to taste
For the Tomato and Onion Salad

2 medium tomatoes, finely chopped
-
½ a small onion, finely chopped
-
2 tbsp coriander, finely chopped
-
¼ tsp salt
-
½ tsp cumin
-
Juice from ½ a lemon
Directions
Make the cucumber raita
In a small bowl mix together the yoghurt, garlic, coriander, mint, lime, garam masala, cucumber, salt and pepper.
Make the tomato and onion salad
In a small bowl mix together the tomatoes, onion, coriander, salt, cumin and lemon.
Assemble the poppadoms
Take the mini poppadoms, stand them up on a tray and place 1 tsp of either mango chutney, raita, lime pickle or salad inside each one.
Serve immediately
Additional Information
Tiptree Mango Chutney is also delicious as an accompaniment to samosas, onion bhajis and pakoras.
