Strawberry Chia Seed Pudding

If you haven’t tried chia seed pudding yet, this fuss-free, super-simple recipe tastes just like strawberry ice cream. Tiny but mighty chia seeds work their magic, thickening a creamy mixture of fresh strawberries, milk and yoghurt into a spoonable pudding, perfectly sweetened with our extra-fruity Reduced Sugar Strawberry Jam.
Prepared in just 10 minutes, then left overnight to set, this easy strawberry pudding keeps well in the fridge for days. Perfect for a make-ahead breakfast, snack or light dessert whenever you fancy something a little indulgent yet wholesome. As well as being a superfood, chia seeds are packed with fibre.
Ingredients
For the Chia Puddings
- 150g fresh strawberries, hulled

120ml milk

120ml full fat natural yoghurt
- ½ tsp vanilla extract

3-4 tbsp Tiptree Reduced Sugar Strawberry Jam

40g whole chia seeds
To serve

6 tbsp Tiptree Reduced Sugar Strawberry Jam

6 strawberries, chopped
-
3 sprigs of mint
-
6 tbsp crème fraîche or thick Greek Yoghurt

Freeze-dried strawberry pieces (optional)
Directions
Add the strawberries, milk, yoghurt, vanilla extract and Tiptree Reduced Sugar Strawberry Jam to a bullet blender and blend until smooth. Alternatively add the ingredients to a large bowl and use an immersion blender to blend the mixture.
Add the chia seeds and stir until evenly mixed. They will try and float to the surface so mix well. Taste the mixture, and if the strawberries are particularly tart you might want to add another tablespoon of jam.
Transfer the mixture to a container with a lid and refrigerate for at least 4 hours or until chia seeds have gelled and the mixture reaches a thick pudding-like consistency. Or leave them to set overnight.
When ready to serve divide the chia seed pudding between the glasses. Top each with 2 tablespoons of Reduced Sugar Strawberry Jam, chopped strawberries, a sprig of mint and a dollop of crème fraîche or thick yoghurt. Sprinkle over some freeze-dried strawberry pieces.
