Guaranteed to be a crowd-pleaser!
Ingredients
- 200g Pitted Dates, Chopped
- 200ml Boiling Water
- 1 Tsp Bicarbonate Of Soda
- 100g Unsalted Butter, Softened
- 150g Light Brown Sugar
- 2 Large Eggs
- 175g Self-Raising Flour
- 1 Tsp Vanilla Extract
- ½ Tsp Ground Cinnamon
For the Sauce

100g Tiptree Brandy Butter
- 100ml double cream
- 50g light brown sugar
Directions
- Preheat oven to 190°C/170°C fan / Gas Mark 5. Grease and line a small baking dish (about 20 x 25cm).
- Pour the boiling water over the dates and stir in the bicarbonate of soda. Leave to stand 10 minutes.
- Cream the butter and sugar until pale, then beat in the eggs and vanilla. Fold in the flour, cinnamon, and soaked dates (including liquid).
- Pour into the tin and bake for 35–40 minutes, until springy.
- For the sauce, gently heat the Tiptree Brandy Butter, cream, and sugar until smooth and bubbling.
- Poke holes in the warm pudding
and pour half the sauce over the top. Serve with the rest on the side and a
scoop of vanilla ice cream.
