Tiptree Christmas Conserve and Mustard Glazed Ham

Bring the spirit of Christmas to your table with this magnificent Tiptree Christmas Conserve and Mustard Glazed Ham. Gently simmered with festive aromatics, the gammon becomes incredibly tender. The magic happens with the glaze, a mix of Tiptree Christmas Conserve, Tiptree Wholegrain Mustard and sweet brown sugar. As it roasts, it develops a glossy, spiced crust that promises a memorable Christmas Dinner.

Ingredients
- 1.5 kg unsmoked gammon joint
- 1 onion, halved
- 1 carrot, roughly chopped
- 1 bay leaf
- 6 black peppercorns
- 3 tbsp Tiptree Christmas Conserve
2 tbsp Tiptree Wholegrain Mustard
- 1 tbsp soft brown sugar
- 1 tsp cider vinegar
Directions
- Preheat the oven to 200°C/180°C fan / Gas Mark 6.
- Place the gammon in a large pan and cover with cold water. Add the onion, carrot, bay leaf and peppercorns. Bring to a gentle simmer and cook for 90 minutes, topping up with water if needed.
- Remove the gammon from the pan and leave to cool slightly. Peel away the rind (if present), leaving a thin layer of fat. You can score a diamond pattern, if you wish.
Mix together the Tiptree Christmas Conserve, Tiptree Wholegrain Mustard, sugar, and vinegar.
- Place the gammon in a roasting tin and brush generously with the glaze. Roast for 40–50 minutes, basting halfway through.
- Rest for 10 minutes before slicing. Serve warm or cold.
